About the Project

Sunny Side Sandwiches started as one of Brisbane’s original gourmet sandwich shops in Windsor, building a loyal following for sangas made fresh on daily-baked shokupan. As demand grew, so did the footprint — a Paddington shop on the corner of Latrobe Terrace, and a new East Brisbane site taking over the former Barra Boys spot on Stanley Street, complete with a window onto the bakery where the shokupan is crafted each morning. Three venues, one standard: quick service, a tight menu done well, and kitchens that can keep up at peak. Hospitality Superstore came on board across all three — fitting out the new builds, helping renovate the existing store, and keeping the day-to-day supplies flowing so the team can stay focused on the food.

Solution

We supplied the full setup, not just the big-ticket gear. That meant the commercial cooking and refrigeration behind the counter — fridges, prep benches and display units sized to each space — plus the kitchenware that gets used every shift: knives, boards, containers, baking trays for the shokupan and the small wares that keep the prep line moving. On the front-of-house side we sorted the crockery along with the takeaway packaging and disposables that carry the Sunny Side look out the door, and we keep the janitorial and cleaning supplies topped up so every site stays spotless. As each new venue opened, we matched the original store’s fit-out so the kitchens run the same way across Windsor, Paddington and East Brisbane — and we’re still the team they call when they need more stock or another piece of equipment.
