About the Project
Sancho Taqueria & Tequileria is the latest venue from the team behind Farmhouse and Oh Boy, Bok Choy — and like all their places, it comes with a story. Owner Amanda Scott’s father was raised in New Mexico, and that heritage runs right through Sancho: the flavours, the Spanish literature and music, even the name — after Sancho Panza, Don Quixote’s loyal sidekick and a Scott family favourite.
The menu leans hard into authenticity — corn, pinto beans and squash, charred and smoked flavours, and a mostly gluten-free offering. On the drinks side, tequila and mezcal lead a cocktail list built to match the food, like the Pueblo Margarita with reposado, prickly pear syrup, lime and a chilli-tajín rim.
The fit-out mirrors golden hour in the Sandia Mountains — burnt oranges, blurred pinks and ochre running across the bar, dining room, laneway and al fresco tables. As Scott puts it, “Sancho is another unexpected oasis in an otherwise ordinary street.”
