# Witt Etna Rotante Control 16″ — Twin Burner Gas Pizza Oven with Rotating Stone
The Etna Rotante Control is Witt’s flagship 16″ gas pizza oven: rotating stone, twin burners, five temperature sensors and touch-dial control. It reaches 500°C in 15 minutes and bakes a Neapolitan-style pizza in 60–90 seconds — no peel-turning, no cold spots, no recovery wait between pizzas.
The motorised stone turns the pizza for you, so the base cooks evenly edge to edge. A second burner under the stone holds it at temperature while you load the next one, and three K-type thermocouples feed a control algorithm that keeps the whole chamber where you set it. Run one of the three assisted modes for guided temperature and timing, or switch to manual and drive it yourself — from a 90-second Neapolitan to slower Roman and New York styles.

## FAQs
**What does the booster burner actually do?**
Sliding a raw pizza onto a hot stone pulls the stone temperature down sharply, which is why most ovens need a recovery pause between pizzas. The booster burner heats the stone continuously from below, so it’s ready for the next pizza as soon as the last one comes out.
**How long does it take to cool down?**
Around one and a half hours, depending on ambient conditions — the insulation that makes it efficient also makes it slow to shed heat. Never touch the outer surface or the stone until the oven has fully cooled.
**What gas does it run on?**
LPG only. Do not connect to natural gas.
**Can I use plastic tools or brushes while it’s hot?**
No. Plastic can melt onto the stone and damage it. Clean the oven only once it has cooled completely.
