The cooking line is the heart of any commercial kitchen, and the equipment you install defines what you can produce, how quickly, and to what consistency. Chefs working in restaurants, cafes, hotels, and institutional catering all have distinct requirements — a bakery’s combination oven demands are very different from a pub kitchen running fried and grilled items through two sittings a night. Understanding the right specification for your menu and service model before you commit to a purchase is essential: cooking equipment is a long-term capital investment.

What to look for when buying commercial cooking equipment

Output capacity matched to covers. Every piece of cooking equipment has a production ceiling. A six-burner range serving a 30-seat café lunch trade is very different from what’s needed in a 120-seat restaurant running continuous dinner service. Calculate your expected peak throughput and buy accordingly — with a modest margin for growth.

Fuel type and kitchen infrastructure. Gas remains the preferred choice for ranges and wok burners in most professional kitchens for its immediate heat response, but induction is rapidly gaining ground where gas infrastructure is unavailable or where kitchen ventilation is a constraint. Combination steam ovens (combi ovens) are arguably the single most versatile piece of cooking equipment available — they can roast, steam, bake, regenerate, and hold, which is particularly valuable in aged care and institutional catering. Make sure your kitchen’s electrical or gas infrastructure supports your chosen equipment before purchasing.

Certification and compliance. In Australia, gas equipment must carry AGA (Australian Gas Association) certification, and all cooking equipment should meet relevant AS/NZS standards. HACCP International-certified cooking equipment provides an additional layer of assurance for food safety management.
